Coffee Creamer Pancakes

If you are a fan of liquid coffee creamer then you will love the variety of flavors this recipe offers and you don't even need pancake mix!!!  Have fun with this simple idea with amazing possibilities.

Coffee Creamer Pancakes

Makes 20

3 eggs
1 1/2 cups flavored coffee creamer
1 cup flour
1/2 teaspoon salt

Whisk ingredients in a small bowl and prepare on a lightly greased skillet over medium heat.

NOTES:  You definitely need to use 1 1/2 cups of liquid for this recipe.  You may dilute the coffee creamer with water or milk if the flavor of the pancakes is too intense.  This works well too it you only have powdered creamer.  Most of the retailers like Coffemate and International Delight offer a wide variety of flavors and feature seasonal flavors which are quite good to use for making pancakes. International delight has a new line called American Favorites which might be fun to play with.  Here are a few ideas I had when I saw them.

  • Almond Joy - Top or mix in some coconut and sliced almonds for a candy bar pancake.
  • York Peppermint Patty - Include bit of candy bar in the batter or sprinkle on top.
  • Cinnabon - Cover pancake with icing and sprinkle on some cinnamon sugar.

Bailey's is fairly new to the coffee creamer business but they did post this recipe to their website.Some of their flavors that look good for making pancakes are the Toffee Almond Cream and Brown Butter Pecan

Chocolate Chip Caramel Pancakes

Makes 8-10 Pancakes

1 3/4 cups flour
1 teaspoon sugar
1 1/2 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
2 eggs
1/4 cup melted butter
1 cup buttermilk
1/2 cup BAILEYS Coffee Creamer Caramel
1/2 cup mini chocolate chips

Preheat your griddle to 325°F. Combine flour, sugar, baking powder and baking soda with salt in a bowl. In a separate bowl, whisk together the eggs, melted butter, buttermilk and BAILEYS® Coffee Creamer Caramel. Add wet ingredients together with dry by gradually stirring the wet ingredients into the dry. Mix the pancake batter with a whisk or mixer for 30 seconds. Do not overmix; let batter stand for 1-2 minutes. Gently fold in mini chocolate chips. Spray griddle with nonstick vegetable oil; pour batter onto griddle and cook until bubbles begin to form and break on top of the pancake. Flip pancake and cook for another minute.Remove pancakes, stack and serve with butter and maple syrup.
